Shepherd's Pie Recipe

This Shepherd’s pie recipe is prepared with ground beef, mashed potatoes and carrots and becomes good. You can make changes in this recipe for instance you may add seasonal veggies and minced chicken and add seasoning according to your taste.

Ingredients:

1 lb lean ground beef
2 tbsp all-purpose flour
1 tbsp chili garlic sauce
¾ cup beef broth
4 large potatoes (peeled and cut into cubes)
1 tbsp vegetable oil
1 tbsp butter
1 tbsp finely chopped onion
1 onion (chopped)
½ cup shredded cheddar cheese
Salt and pepper to taste
5 carrots (chopped)

Preparation:

1. Preheat oven to 350 degrees F.
2. Boil potatoes and carrots for 15-20 mins until become tender completely.
3. Then drain all the water and mash them separately.
4. Now in mixing bowl combine mashed potatoes, butter, onion, salt, pepper and half of cheese and make smooth dough of mashed potatoes.
5. Sauté onions in oil for just 1-2 mins, add ground beef on medium high heat until all the water released from beef would get dry and turn into brown in color.
6. Add flour to the beef and cook for 1-2 mins until all flour fold well with the beef.
7. After that add chili garlic sauce and beef broth and simmer for 5-10 min after boil.
8. Now take a casserole dish and spread the ground beef mixture at the bottom. Make a layer of mashed carrots and mashed potato mixture on the ground beef and top with remaining cheese and place in preheated oven for 20-15 min until become golden brown from top.

Biscuit Pudding Recipe

This biscuit pudding is one of an easy dessert at home, it only takes time in baking otherwise the method is simple. This pudding would give good taste if the graham cracker biscuits are one day old so that the biscuits would get soft quickly and takes less time to set.

Ingredients:

2 ¼ cup milk
2 eggs
3 cup graham cracker biscuits (break into large pieces)
½ pack candy biscuits (powdered)
½ cup brown sugar
1 tsp cinnamon
¼ tsp salt
½ cup raisins
1 can condense (or as required for topping)

Preparation:

1. In a mixing bowl beat eggs until egg white and yolks mix well.
2. Add milk to the eggs and beat again to mix.
3. Combine brown sugar and raisins together.
3. Take wide baking dish and spread biscuit chunks at the base of dish.
4. Pour beaten egg and milk mixture over the biscuits, now make layer of raisins mixture, pour condensed milk to cover the biscuits and raisins and in the end sprinkle cinnamon and powdered candy biscuits on top.
5. Place the dish in preheated oven for 30-40 min at 350 degrees F until pudding becomes set, you can check it by inserting the knife edge in the center if it comes out clean then the pudding is ready to take out from oven.

Sponge Roll Recipe

This Sponge roll is a low-carb dessert therefore no sugar is used in the preparation. The filling is prepared with simple lemon jello you may also use jam in the filling if you don’t want to make it low-carb dessert.

Ingredients:

8 eggs (separated)
1 tsp stevia
1 cup ground almonds
1 tsp vanilla extract
For Filling:
1 pack Lemon jelly powder
1 ½ cup hot water
Grated lemon rind

Preparation:

1. Preheat oven to 325 degrees F.
2. Beat egg yolks in a bowl until get light liquid texture.
3. Add almond powder and stevia to the beaten yolks and beat well.
4. In another mixing bowl beat egg whites until stiff peaks are formed, then add vanilla extract and mix well.
5. Now combine egg white mixture and yolk mixture using wooden spatula.
6. Pour the batter in a greased and dusted (dust with almond powder) baking pan and bake for 15-20 min in preheated oven at 325 degrees F.
7. Meanwhile cook filling ingredients for 3-4 min and then cool to room temperature stir continuously so that hard crystals of jelly would not form.
8. When the sponge has been done cool it to room temperature and then spread the prepared filling mixture over the whole sponge. Now carefully roll the sponge to make swiss roll shape, clean the sides of the roll if the filling takes out form while rolling. Cool the sponge roll in fridge for 30 min and then serve.

Shish Kebabs Recipe

This recipe of shish kebabs is from Mediterranean cuisine and can be served as iftar meal. In this recipe the kebabs are prepared n grill pan and then give smoky flavor with burning coal, you may also bbq these kebabs to enjoy perfect bbq flavor.

Ingredients:

500 gm chicken breast (cut into small cubes)
1 tbsp garlic paste
½ tsp ground white pepper
1 tsp mustard powder
3 tbsp mayonnaise
3 tbsp yogurt
2 tbsp tahini sauce
2 tbsp lemon juice
1 tsp dried oregano
Salt to taste
2 onion (cut into cubes and separate each layer)
2 capsicum (cut into cubes)
2 tomatoes (seeded and cut into cubes)

Preparation:

1. Marinate chicken pieces with the ingredients mentioned above and leave for 2-3 hrs.
2. After that insert chicken pieces and vegetables in skewers alternately.
3. Now grill the skewed chicken and veggies on griddle with little amount of oil until become light brown from every side. It would take 5-10 min.
4. When all the chicken have been grilled place them in a deep sauce pan, drop 1 tsp of oil onto the hot charcoal piece, then place it in the pan of skewers and cover the lid. Smoke starts to release form the coal and cover for 10-15 min until white smoke stop to release from the coal.
5. Serve the smoky shish kebabs with pita bread and hummus.

Chicken Croquettes

These chicken croquettes can be prepared either by frying or by baking, in this recipe frying method is used. These croquettes are usually served as tea time snack but can also be served as iftar food.

Ingredients:

5 tbsp margarine
3 tbsp flour
½ cup milk
½ cup chicken broth
2 cup boiled chicken (shredded)
2 tsp ground black pepper
1 ¼ cup bread crumbs
3 tbsp fresh parsley (chopped)
Salt to taste
2 eggs (lightly beaten)
¼ cup grated Parmesan cheese

Preparation:

1. Prepare white sauce for the croquettes, for that heat margarine in pan and cook flour in the melted margarine until pleasant roasting smell starts to come but flour would not get brown it should remain white in color.
2. Then slowly add milk and broth to the butter flour mixture and stir well so that lumps would not form.
3. When the sauce gets thick remove the pan from heat and then cool to room temperature.
4. In a mixing bowl, combine shredded chicken, 1 cup bread crumbs, parsley, salt, pepper and egg.
5. Mix the chicken mixture with half of the prepared white sauce and place this mixture in fridge to set for at least an hour.
6. Now make balls of this chicken mixture and give longitudinal shape, make 8-10 croquettes using this mixture.
7. After that roll the croquettes in remaining sauce and bread crumbs and set aside.
8. Heat the oil for deep frying and then fry croquettes until become light golden brown in color.
9. Serve the delicious croquettes with any sauce or ketchup.

Shashlik Recipe

This shashlik recipe is from Indo-Chinese cuisine and is prepared with chicken and veggies. In this recipe shashlik is cooked via cooking method otherwise it is usually cook on grill and served on sizzling dish to enjoy full grilling flavor.

Ingredients:

500 gm boneless chicken (cut in cubes)
2 capsicum (cut in cubes)
2 medium onions (cut in cubes)
2 medium tomatoes (seeded and cut in cubes)
¼ cup lemon juice
Salt to taste
½ tsp crushed red chili
1 tsp black pepper
1 tbsp soya sauce
1 tbsp hot sauce
oil for shallow frying

Preparation:

1. Marinate chicken in lemon juice, soy sauce, salt, black pepper, hot sauce and red chili for 30 min.
2. After that add vegetables to the marinated chicken and mix well.
3. Now take bamboo skewers and skew chicken and vegetable pieces alternately.
4. When all the chicken and veggies skewed in the skewers, take a sauce pan and heat oil for shallow frying.
5. Place skewers in the pan and cook on medium heat for 8-10 min until become golden brown from every side.
6. Serve the shashlik in beautiful serving platter with Manchurian sauce and fried rice.

Malai Kofta

This malai kofta recipe is from South Asian cuisine and can be serves as one of Eid party recipes. In this kofta recipe no more meat is used the balls are prepared with cottage cheese, also the gravy is prepared with simple and easy method hence this recipe can be prepared in very short time for dinner.

Ingredients:

For Kofta:
2 ½ cup cottage cheese (grated)
4 tbsp roasted gram flour
3-4 ground cashew
4 green chilies (chopped)
2 tbsp chopped fresh coriander
½ tbsp ground cumin
Oil for shallow frying
2 tbsp lemon juice
Salt to taste
For Gravy:
3 tsp vegetable oil
½ tbsp ginger garlic paste
½ tsp red chili powder
1 tsp turmeric powder
2 tsp coriander powder
2 green chili
2 cup milk
1 onion (finely chopped)
2 tomatoes (chopped)
Salt to taste

Preparation:

1. In a mixing bowl, knead cheese until become smooth so that soft dough would form.
1. Add ginger garlic paste, cashew, green chilies (chopped), fresh coriander, cumin and lemon juice and mix well.
2. Make small balls of lemon size and roll them in graham flour.
3. Heat oil in frying pan for shallow frying and then fry them in batches until become golden brown in color.
4. Now prepare gravy, for that sauté onion in a wok for 2-3 min.
5. Then add turmeric powder, coriander powder, red chili, green chilies, tomatoes and salt and simmer for 5 min. until tomatoes become soft.
6. After that add milk and let the gravy to boil on medium heat.
7. When oil starts to appear on the gravy and it gets thick then add the fried kofta to the gravy and simmer for 5 min more.
8. Remove the pan from heat and serve the delicious malai kofta chapati.

Egyptian Bread

This recipe of Egyptian bread is prepared with fig and dates and thus become very healthy meal for breakfast. The method is simple and easy you just need to mix the ingredients as mentioned below and then bake in oven, it only takes time in baking otherwise all the procedure is very easy. You may add raisins and other nuts of your choice.

Ingredients:

2 oz butter (softened)
6 oz dried figs (chopped)
5 oz pitted dates (chopped)
1 ½ tsp baking soda
1 cup boiling water
4 oz caster sugar
2 eggs
2 oz chopped walnuts
½ tsp baking powder
½ tsp salt
2.5 oz cup all-purpose flour
3.5 oz whole wheat flour

Preparation:

1. Preheat oven to 350 degrees F.
2. Take a mixing bowl and combine dates, fig and baking soda.
3. Add boiling water and mix well, leave it at room temperature for 15 min.
4. Meanwhile take another bowl and beat eggs and sugar until become fluffy and creamy.
5. Now combine egg mixture, date mixture and walnuts in a large mixing bowl and stir well to mix evenly.
6. Sift together both type of flour, baking powder and salt and fold it with the date mixture using spatula or wooden spoon.
7. Take a greased pan of any shape and pour the prepared bread mixture in it.
8. Place the pan in preheated oven for 60-70 min until become done. You can check it by inserting a toothpick in the center of pan if it comes out clean then the bread is ready to take out from oven.
9. After that cool the Egyptian bread to room temperature and then cut into slices.

Syrian Bread

This Syrian bread recipe is quite similar to pita bread; the only difference is that pocket is not necessary in this bread as it is not usually used as sandwich. It is better to knead this dough in dough mixer to save time and knead the dough properly but you can also make without it as describe below.

Ingredients:

1 1/8 cup water
2 tbsp vegetable oil
½ tsp white sugar
1 ½ tsp salt
10 oz all-purpose flour
1 ½ tsp instant yeast
½ cup sesame seeds

Preparation:

1. Preheat oven to 350 degrees F.
2. Take a wide mixing bowl or spread the flour on your kitchen counter to knead the dough properly.
3. Make a well of flour and add rest of the ingredients except water in the well.
4. Start mixing the ingredients with flour slowly so that every ingredients incorporate with the flour well.
5. After that slowly add water and start kneading the dough until become smooth and should not stick to your hands.
6. Leave the dough at room temperature for 30 min until it would rise to almost double.
7. Make eight equal pieces of dough and shape it to round balls.
8. Roll each of the balls in flat circular shape of ¼ in. thick, the size of the bread has to be 6-8 in. diameter.
9. Coat the rolled dough with sesame seeds and then bake them on baking stone until become golden brown and puffed up, baking time of each bread would be 4-6 min.

Coconut Fugde

This fudge recipe is quite similar to coconut delight which is more popular in Indian and Pakistani cuisine. The recipe is simple but it takes little more effort in the end when you need to cook it gently at that time the mixture starts to get harder and feel difficult to stir. Though it requires bit more effort but this coconut fudge has great taste.

Ingredients:
½ cup coconut milk
1 cup milk
2 cup sugar
¾ cup coconut flakes
1 cup butter
Peeled almonds for garnishing

Preparation:
1. Heat butter in a pan and cook coconut flakes for just 2-3 min on medium heat until pleasant smell starts to come. Don’t cook it enough to change its color, it should remain white or pale white in color.
2. Now boil coconut milk and milk in a sauce pan.
3. Add sugar and cook for 5-10 min more so that sugar would completely dissolve in the milk.
4. Add roasted coconut flakes in the milk mixture and continuously stir the mixture while adding so that lumps would not form. Cook the mixture on low heat until it starts bubbling and gets thick.
5. Stir the mixture in between to avoid sticking, when all the liquid absorbs in the coconut flakes increase the flame to medium high and gently cook until the mixture starts to loose the edges of pan.
6. When mixture cook enough to get the shape of ball and may not stick to the spoon then turn off the flame. Spread the coconut fudge on a rectangular pan, sprinkle almonds on top and immediately cut it into square pieces.
7. Serve the coconut fudge after cooling it to room temperature.
